Xavier’s fillet

Ingredients For 4 people
- 500 gr pork fillet or pork fricandeau
- 8 tablespoons of grilled red pepper
- 2 dl vegetable or chicken stock
- 1 dl Barbãr Blond beer
- Freshly ground pepper and salt to taste
- 500 gr pork fillet or pork fricandeau
- 5 tablespoons of sunflower or olive oil
- 2 tablespoons of cream
- 2 teaspoons of paprika
Preparation 30 min
Cut the white part of the leek into rings, rinse and allow to drain in a sieve. Cut pork into slices and sprinkle with salt. Heat up two tablespoons of oil in a wok or frying pan, stir fry leeks, add beer, stir and heat up. Then add the cream and stir. Liquidise the red pepper. Heat up three tablespoons of oil in a wok and stir fry the pork slices. Season with salt and pepper to taste. Place pork slices with the leeks and paprika sauce on preheated plates. Garnish with paprika. Serve with tagliatelle or potato croquettes, accompanied by a nice cold glass of Barbãr Blond beer.
