Pancake parcel with vanilla ice cream, Barbãr Bok sabayon and dark chocolate

Ingredients For 4 people
- 8 eggs
- 200 g of flour
- 1 pinch of salt
- 20 cl of milk
- Butter
- Caster sugar
- 15 cl of Barbãr Bok
- Dark chocolate
- 4 scoops of vanilla ice cream
Preparation 60 min
Prepare the pancakes by mixing 4 whole eggs and milk, sift over flour, a pinch of salt and mix to obtain a smooth pancake batter, set aside to cool for 30 mins. Scrape the chocolate in order to make chocolate chips and set aside. Melt butter in a pan, pour the batter and make 4 pancakes to set aside. Scoop the vanilla ice cream, and place the scoops on a gastro tray in the freezer. Make the sabayon by stirring in a pan 4 egg yolks with 4 half shells of fine sugar, stir until firm and then add 4 half shells of Barbar bock, stir again to obtain a foam. Place the pan on the fire and whisk vigorously until the mixture becomes frothy and stiff, do not let it get too warm as the egg yolks may cook and form lumps, add the chocolate chips and stir to melt, then set it aside. Plating: Place a scoop of vanilla ice cream in the center of the pancake and shape it like a parcel before closing it. Place toothpicks in the pancake in order to keep the shape if needed. Place the parcel on a plate and glaze with Barbãr Bok sabayon and chocolate. Garnish with toasted pistachios.
