Mum’s Turkey

Ingredients For 4 people
- 500 gr turkey fillet
- 200 gr chestnut mushrooms
- 100 gr Ardennes ham or low-fat ham, cut into strips
- 2 dl chicken stock
- 2 tablespoons of freshly-squeezed lemon juice
- Freshly ground pepper and salt to taste
- 2 shallots
- 150 gr shiitake
- 6 tablespoons of olive or sunflower oil
- 1 dl Moeder Overste beer
- 2 tablespoons of finely chopped leaf parsley or chives

Peel the shallots and cut them into pieces. Clean chestnut mushrooms and shiitake with a small brush, cut off the hard under part and cut into pieces. Cut turkey fillets into cubes and allow to marinate for two hours in a mixture of 4 teaspoons of oil and fresh lemon juice. Heat up two teaspoons of oil in a frying pan or wok and stir fry the mushrooms and shallots. Add stock and continue stirring. Then stir the beer into the mixture and heat for 3 to 4 minutes while stirring. Season to taste with salt and pepper. Dab the turkey fillets until dry and cook in a hot frying pan, under a hot grill or on a barbecue. Serve with mushroom sauce sprinkled with strips of Ardennes or low-fat ham. Serve with a nice cold glass of Moeder Overste beer.
