Hierdoor ontstaat een &#8216;pap&#8217; waarbij het zetmeel wordt afgebroken tot vergistbare suikers, meer bepaald glucose, fructose, sacharose, maltose en maltotriose. Dit zijn de vaste deeltjes van het graan die niet oplosbaar zijn. De brouwer gaat op een aantal cruciale momenten van het proces verschillende hopsoorten en kruiden toevoegen. Le brasseur ajoute, \u00e0 certains moments cl\u00e9s, divers houblons et \u00e9pices.
